French cuisine with a tropical twist
New Caledonia holds a special place in the hearts of Chef Christophe and Josephine Gregoire. They met and married in Nouméa. They both lived and worked in New Caledonia, Christophe as head chef at various establishments, including Koumac, Kuendu Beach Resort. Christophe also worked as a teacher at the Escoffier Hospitality School. Josephine was a health promotion specialist with the Secretariat of the Pacific Commission.
In late 1999 Christophe and Josephine moved back to Australia and in 2000 opened their first French restaurant, Christophe’s Restaurant in Manuka, Canberra. In 2006 they opened their second, Le Très Bon, in Bungendore, NSW.
Le Très Bon is now a popular multi-award winning restaurant. Since 2006 Christophe and Josephine have conducted an annual Food & Wine tour to Alsace & Les Vosges, France. In 2010 they piloted their first New Caledonia Gourmet tour and have shared their love for this island with their tour clients ever since.
Their emphasis is always on creating a travel experience which is convivial, unique and based on personal connection to place. They invite you to share their love of New Caledonia.
