French cuisine with a tropical twist

New Caledonia holds a special place in the hearts of Chef Christophe and Josephine Gregoire. They met and married in Nouméa. They both lived and worked in New Caledonia, Christophe as head chef at various establishments, including Koumac, Kuendu Beach Resort. Christophe also worked as a teacher at the Escoffier Hospitality School. Josephine was a health promotion specialist with the Secretariat of the Pacific Commission.

 

In late 1999 Christophe and Josephine moved back to Australia and in 2000 opened their first French restaurant, Christophe’s Restaurant in Manuka, Canberra. In 2006 they opened their second, Le Très Bon, in Bungendore, NSW.

Le Très Bon is now a popular multi-award winning restaurant. Since 2006 Christophe and Josephine have conducted an annual Food & Wine tour to Alsace & Les Vosges, France. In 2010 they piloted their first New Caledonia Gourmet tour and have shared their love for this island with their tour clients ever since.

 

Their emphasis is always on creating a travel experience which is convivial, unique and based on personal connection to place. They invite you to share their love of New Caledonia.

Day 1

Welcome drinks and 3 course dinner with wine

Day 2

Discover Gourmet and Cultural Noumea
Visit & tasting at the local market– for fresh produce, seafood and local arts and crafts.
Cooking demonstration and lunch at La Table des Gourmets with
Chef Fabrice Louyot.
Guided and animated tour of the Jean Marie Tjibaou Cultural Center
PETANQUE GAME 1
Pastis, Champagne, French cheese & a game of Pétanque on
beach at sunset.

 

Day 3

A day on L’Escapade Island.
A fun cooking class and competition in the
resort’s wedding chapel. Cooking competition judged by
Escapade Island Resort’s Head Chef Xavier Rocher. Chef
Rocher worked at Le Tres Bon in Bungendore!
The day includes access to resort pool, deck and a delicious seafood buffet
lunch.

 

Day 4

La Maison de la Perle for a presentation on the different
stages of making a piece of jewellery using the magnificent
black pearl.
Lunch at one of our favourite restaurants in Noumea, Chez
Toto Restaurant.
PETANQUE GAME 2/FINALS.
Exclusive evening concert with famous local singer Vanuella Watt – la diva du Pacific.

 

Day 5

Departing sweetly
Demonstration cooking class; how to make a traditional
French baguette!
Artisan chocolatier Patrick Morand offers our group the exclusive luxury of watching the master at work with a special chocolate demonstration class.
Breathtaking views of sunset and Noumea from Oeun Toro
Mountain.
Farewell group dinner plus Tahitian Dance Show.

Departure
We recommend that you stay longer to further explore New
Caledonia and its outer islands.
